Harvest: Manual harvest of selected bunches carried out towards the end of September.
Techniques: destemming and cold pre-fermentation maceration after cooling the grapes to 5 degrees. Followed by normal fermentation at controlled temperatures after the addition of selected yeasts. Aging of the individual wines in barriques before the optimal final blend. Rest in the bottle for 3 months.
Tasting notes:
Colour: Intense ruby red with granite reflections.
Perfume: Intense with notes of ripe cherry.
Palate: Red fruits. Very balanced between acidity and tannins, soft and velvety with spicy notes, persistent on the palate. Easily drinkable.
Pairing: Cold cuts, Venison and pasta dishes with roast sauce
