Grapes: Barbera + Merlot + Syrah + Cabernet S.
Harvest: By hand between mid and late September.
Method: Destemming and pre-fermentation cold maceration (6-8 ° C) after cooling the grapes to 5 ° C. Followed by normal fermentation at controlled temperature (25-27 ° C) after adding selected yeasts. Refinement of individual wines before optimal final assembly. Rest in the bottle for 2 months.
Colour: Intense ruby red.
Bouquet: Intense, fruity, with notes of ripe cherry, red fruits and a light spicy aftertaste.
Palate: Very balanced between acidity and tannins, with spicy notes, persistent on the palate.
Pairings: Ideal for medium-aged meats and cheeses. Wine to be savoured.
