Grapes: 100% Barbera.
Harvest: It comes from the best selection of our vineyards. In the first ten days of October, the grapes were picked by hand from rigorously thinned rows and placed in boxes.
Method: Destemming and pre-fermentation cold maceration (6-8 ° C) after cooling the grapes to 5 ° C. Followed by normal fermentation at controlled temperature (25-27 ° C) after adding carefully selected yeasts. Aging in wooden barrels for 12 months followed by 6 months in steel. Rest in bottle for at least a further 6 months.
Colour: Intense ruby red, impenetrable.
Bouquet: Black cherry, ethereal, with notes of well-ripened red fruit jam, vanilla, black pepper, coffee, tobacco.
Palate: Balance, between well accentuated freshness and alcohol, velvety, rich, with excellent structure; silky tannins. A “chewable” wine. The retro-olfactory sensations are reminiscent of red fruits perceived on the nose; in evolution emerges a pleasant final note of black liquorice.
Pairings: Seasoned cold cuts, first courses seasoned with red meats, roasts, braised meats, mature cheeses; excellent meditation wine.
