Harvest: Annual harvest in crates at the beginning of September, with selection of perfectly ripe bunches.
Techniques: Fermentation in French Oak barrels and aged on the lees for 4-6 months. Labour intensive process of “battonage a main”, resting for at least 6 months in bottle.
Tasting notes:
Colour: Straw yellow with bright golden reflections.
Perfume: Intense aromas of white flowers and vanilla.
Palate: Full bodied and silky with a persistent note of buttery toast at the finish. Mineral notes that develop in complexity over time.
Pairing: Oysters and shellfish, white meat, cheese.
