Refinement period: 4 months

Harvest: Manual harvest of bunches first ten days of September.

Techniques: Immediate cooling of grapes at 8 degrees. Destemming. Separation in “horizontal press” of the juice and must in the absence of oxygen. Fermentation in steel until complete exhaustion of sugars. Aging 3 months in steel and 1 month of rest in the bottle.

Tasting notes:

Colour: Pale yellow with greenish reflections.

Perfume: Characteristic with notes of tropical fruits, pineapple, banana and white flowers.

Palate: Sapid with a good structure in balance between minerality and acid freshness.

Pairing: Fish, white meats, light soups. Considering its structure, also recommended for more demanding dishes.
