Grapes: Blend of company grapes.
Harvest: By hand, early September.
Method: Whole pressing of the grapes after cooling to 5 ° C and separation of the must in the press. Fermentation at controlled temperature (15-18 ° C) after adding selected yeasts and aging in steel. Helix innovative replaceable cork. Rest in the bottle for at least 1 month.
Colour: Pale pale pink.
Bouquet: Delicate, with notes of fresh fruit and summer flowers.
Palate: Sapid at the start, velvety to the touch, broad, complex; balanced in acidic freshness, soft in structure. In closing it is persistent; the post-nasal sensations fade from cherry to peach, with slight citrus interferences, and go out with the pleasantly almond note of a cherry stone.
Pairings: Crustaceans, grilled fish and salads and desserts. Perfect for summer meals or as an aperitif.
