Grape: Chardonnay & Pinot Nero

Alcohol: 12.5% vol

Refinement period: 4 months

Aging Potential: 2-3 years

Harvest: Manual harvest at the end of August.

Techniques: Gentle pressing of the whole grapes, organic sediment separation of the flower must. A first fermentation for the preparation of the base wine. Second fermentation in an autoclave according to the Martinotti method, aging ”on the lees” with automatic battonage in an autoclave for a duration of 3-6 months.

Tasting notes:

Colour: Pale yellow with greenish notes. Fine and persistent perlage.

Perfume: It is fine, fresh and elegant with fruity and floral scents and bread crust nuances.

Palate: Structured and well balanced between crisp freshness and residual sugar.

Pairing: As an aperitif thanks to its freshness or throughout the whole meal.
