Grapes: Chardonnay and Sauvignon.
Harvest: By hand, only the perfectly ripe bunches.
Method: Destemming and short pre-fermentation maceration of the grapes stored at 5-8 ° C. Soft pressing, to extract the most prized aromas. Fermentation in French wooden barrels after addition of carefully selected yeasts stays on the “noble lees” in barrels for 12 months. Rest in the bottle for at least another 3 months.
Colour: bright yellow with green reflections.
Bouquet: Intense and elegant with hints of white flowers and vanilla.
Palate: It is rich and delicate, with a great balance between the notes of white fruit and vanilla.
Pairings: Seafood, white meats and cheeses.
